Rhubarb Bars

Ingredients

Crust

  • 1 1/2 Cup Flour
  • 3/4 Cup Butter, Cubed
  • 1/4 Cup Powdered Sugar

Filling

  • 3 Lg Eggs, Beaten
  • 2 Cups Sugar
  • 1/2 Cup Flour
  • 1/2 TSP Sat
  • 4 Cups Rhubarb, Diced

Instructions

Crust

  • Combine crust ingredients above and press into 9 x 13 greased pan
  • Bake at 350 Degrees for 10-12 minutes or until lightly browned

Filling

  • Combine all filling ingredients then add the rhubarb and mix
  • Pour filling over hot crust

Bake

  • Bake at 325 for 30-35 minutes or until no longer jiggly
